Mozzarella Caprese with Roasted Red Peppers and a Balsamic Reduction

Nothing makes this Italian girl happier than mozzarella 🙂

Ingredients:

  • Mozzarella
  • Fresh Basil ( My mother grows it herself but you can also buy it fresh from the supermarket)
  • Roma tomatoes
  • Roasted red peppers ( My mother makes these herself but again you can buy them at the supermarket)
  • Balsamic
  • Sugar
  • Salt and Pepper

Directions:

  1. In a pot, pour in balsamic on high heat and add sugar ( it will reduce by half when cooking ). Make sure you are constantly stirring and remove the balsamic after it turns into a syrup, takes about 4 minutes. Set aside and let cool for one minute. Pour on food before it hardens in the pot.
  2. Stack all ingredients together and feel like you are in Italia 🙂
