Tuna Avocado Tomato Salad with Roasted Edamame & Balsamic Vinegar

Last name I made this quick and easy tuna salad for lunch today. I dislike mayo but love tuna so I am always trying to think of ways to make tuna fish salad taste good without the ever so repulsing mayo šŸ™‚

Ingredients:

  • 1 can of tuna fish
  • 1 ripe tomato
  • 1/2 avocado, diced
  • 1/4 cup of fresh lemon juice
  • 1/4 cup of red onion (depending on how much raw onion you like)
  • Red chili flakes (love, love, love)
  • Dry roasted edamame (I used this for a crunch factor and because they are so yummy, I used Seapoint Farm Dry Roasted Edamame Lightly Salted)
  • Splash of balsamic vinegar

Directions:

  1. Mix all ingredients together and enjoy right away or the next day!
