Rice Pasta with Butter Beans, Roasted Cauliflower, Sun-Dried Tomatoes, Chopped Kale & Fresh Mozzarella

The picture of this delicious dish was sent to me by my cousin, Andrea, and her husband, Chris! This recipe is a great way to kick off this cold, new year with some hearty and healthy pasta- while staying on track of course! 🙂

Ingredients:

  • Package of brown rice pasta
  • 1 can of butter beans
  • 1 head of cauliflower, diced
  • 1 cup of sun dried tomatoes, chopped
  • Handful of kale, chopped
  • Olive oil
  • Fresh Mozzarella, diced
  • 3 garlic cloves
  • Sea salt
  • Fresh ground pepper

Directions:

1) Sauté garlic in olive oil until lightly brown

2) Add in cut cauliflower (stir often), roast for 15 mins on medium heat

3) Add in sun-dried tomatoes and stir even 2 minutes

4) Add sea salt and fresh ground black pepper

5) Cook rice pasta (13 minutes)

6) When pasta has 9 minutes left, add in large butter beans (stir into mixture)

7) When pasta has 5 minutes left add in chopped kale (stir for 2 minutes until fully mixed)

8) Drain rice pasta and add ingredients

9) Add diced fresh mozzarella

10) Garnish with grated cheese and ground pepper
