“Twice” Baked Cauliflower

This recipe is truly amazing! When you are eating this you feel like you are actually eating loaded mashed potatoes but instead it is cauliflower! Thanks to http://www.loveandprimal.com/recipes/primal-twice-baked-cauliflower/ for the recipe, we loved it!

Serves 4

Ingredients
  • Cauliflower, raw, 1/2 head, large (6-7″ dia)
  • Shredded Cheddar Cheese, 1 cup
  • Fresh Chives, 2 tbsp chopped
  • Pepper, black, 1/2 tsp
  • Butter, salted, 1 tbsp
  • Yogurt, plain, 1/4 cup (8 fl oz)
  • Chopped bacon, 2 tbsp
  • Salt, 1/2 tsp
  • Garlic – minced, 1 tsp
  • Sour Cream,  1/4 cup
Directions:
  1. Cook cauliflower until tender (Microwave covered with NO water added for approx 6 minutes on high).
  2. Preheat oven to 400F.
  3. Process cauliflower until smooth with food processor. Add in yogurt, sour cream, and butter and process until creamy smooth.
  4. Add remaining ingredients together in a medium bowl, fold until mixed.
  5. Use cooking spray on 4 seven ounce ramekins or other small oven safe dishes and spoon mixture into dishes.
  6. Place all small dishes on a cookie sheet for easier handling.
  7. Bake for 15 minutes on middle rack and then **broil for a few minutes until top is golden brown.
  8. Makes 4 servings
Tips
  1. * Squeeze moisture out of cauliflower with a kitchen towel or cheese cloth so that it’s more the consistency of potatoes before mixing.
  2. * Mix a little olive oil and grated Parmesan cheese. Spread on top and broil until golden brown
