Organic Grilled Chicken & Winter Harvest Vegetables tossed with Goat Cheese, Butter Beans and Quinoa Pasta

While enjoying my new job in NYC, I have had the pleasure to shorten my commute and stay with my two awesome cousins who live closer to the city (2.5 hours v 30 minutes). Last night, we decided to make this healthy “pasta” dish with vegetables, butter beans, quinoa pasta and goat cheese. We used a variety of different colored vegetables to make the dish bright and inviting! It was a perfect hearty meal for the freezing temperatures New York experienced last night!

Gluten Free Quinoa Pasta:11007622_10155248021545531_276225721_nIngredients:

  • 2 packages of fresh Brussels sprouts, halved
  • 3 bell peppers, diced (We used 1 red, 1 yellow and 1 orange)
  • 2 cups of cherry tomatoes, halved (red and yellow)
  • 1 box of gluten free quiona pasta
  • 1 sweet onion, cut into long strips
  • 4 pieces of organic chicken, grilled and diced
  • 1 can of butter beans, drained and rinsed
  • 1 cup of goat cheese
  • 4 garlic cloves, diced
  • 2 table spoons of olive oil
  • Splash of chicken broth
  • Splash of reserved pasta water
  • Salt and pepper
  • 1/4 tsp of red pepper flakes

Directions:

  1. In a large skillet, sauté the garlic and oil on medium-low heat for 3-4 minutes. Turn up heat to medium and add in Brussels sprouts and onions
  2. While the Brussels sprouts are cooking, fill a large pot with water and place on high heat with lid covered (This is where you will cook your pasta. We cooked our pasta towards the end for 7 minutes so it could be al dente. Remember add salt to the water before you add pasta for flavor!)
  3. After 10-12 minutes of Brussels sprouts and onions cooking, add in the peppers and sauté for 5 minutes. Add in tomatoes and butter beans
  4. While this is all cooking, grill your chicken for 10 minutes, 5 minutes per side. (We used a griddle to do this)
  5. Once chicken is cooked, dice and add to vegetables. Add in cooked pasta,  splash of chicken broth, salt, pepper, red pepper flakes and a splash of reserve pasta watered.
  6. Transfer to a big bowl and toss in goat cheese ( This makes the pasta super creamy! )
  7. Plate dish and top with extra goat cheese if you prefer
  8. Enjoy with a huge glass of wine (or 5) !!
