This delicious dinner was made and sent to be my sister Deana. Even though she is away at college, Deana can still make herself something delicious and healthy!
Ingredients:
- 1/2 onion
- 2 garlic cloves
- 1/2 yellow pepper
- 1/4 pound of turkey sausage
- 1 apple, diced
- 3 cups of kale
- 1/2 cups of quinoa
Directions:
- Cut acorn squash in half, drizzle with olive oil and bake in the oven at 375 degrees for 20 – 25 minutes or until golden brown
- Meanwhile, saute all the ingredients in a skillet with coconut oil
- Once squash is complete, add all the ingredients in the squash
- Enjoy!
