Acorn Squash Stuffed with Turkey Sausage, Apple and Kale

This delicious dinner was made and sent to be my sister Deana. Even though she is away at college, Deana can still make herself something delicious and healthy!

Ingredients:

  • 1/2 onion
  • 2 garlic cloves
  • 1/2 yellow pepper
  • 1/4 pound of turkey sausage
  • 1 apple, diced
  • 3 cups of kale
  • 1/2 cups of quinoa

Directions:

  1. Cut acorn squash in half, drizzle with olive oil and bake in the oven at 375 degrees for 20 – 25 minutes or until golden brown
  2. Meanwhile, saute all the ingredients in a skillet with coconut oil
  3. Once squash is complete, add all the ingredients in the squash
  4. Enjoy!
