Tilapia Fish Tacos with Mango Salsa


**This recipe was made for two people, even though we had a ton leftover!


  • 4 filets of Tilapia
  • 1 mango, chopped
  • 1/2 jalapeño, chopped
  • 1/2 red bell pepper, chopped
  • 1 can black beans, rinsed
  • 1 cup of corn
  • 1 cup of cilantro, chopped
  • Whole Wheat Tortillas
  • 1/2 Avocado
  • 4 cherry tomatoes, sliced
  • 1 TBSP chopped onion
  • 1 TBSP chili powder
  • 1 TBSP garlic powder
  • 1 TBSP chopped garlic
  • Extra Virgin Olive Oil
  • 3 lime
  • 3 lemon
  • Salt and pepper to taste


  1. Preheat oven to 400 degrees
  2. Meanwhile, combine oil, chili powder, garlic, garlic powder, salt and pepper, half of the chopped jalapeño, juice of one lime and juice of one lemon and cilantro in a bowl. Place tilapia filets in the bowl and coat with the marinate.
  3. On a baking sheet lined with aluminum foil, place the Tilapia filets with sauce on and bake for 15-20 minutes or until the fish is nice and flaky.
  4. While the fish is cooking, take the can of rinsed black beans, corn, mango, peppers, the other half of jalapeño, cilantro, juice of one lime and juice of one lemon, salt and pepper and a pinch of chili powder in a bowl. Put in fridge and set aside until fish is cooked.
  5. Place avocado, tomatoes, cilantro, 1/2 lemon and 1/2 lime, garlic powder, onion, salt and pepper in a bowl and mash up to make guacamole.
  6. One the fish has been cooked, heat a skillet and place tortillas in to warm them up. Once warm, start to assemble the taco! I placed the fish on the tortilla first, followed by the mango salsa and then the guacamole!


I served these tacos with mashed sweet potatoes and roasted broccoli. For the sweet potatoes, stab your knife through the sweet potatoes and microwave for 10 minutes. Once they are removed from the microwave, let cool and start to peel skin off. Place the sweet potato flesh in a bowl with salt, pepper, a TSP of butter and a pinch of milk and mix together. For the broccoli, toss in olive oil, salt and pepper and place on a baking dish with aluminum foil and bake on 400 degrees for 45 minutes.
