Creamy Avocado and Spinach Pasta



  • 1 zucchini, spiralized
  • 1/2 clove garlic
  • 1/2 avocado
  • 1/2 cup fresh spinach
  • 1/4 cup pecans
  • 1/4 cup basil
  • 1 tbsp fresh lemon juice
  • 3/4 cup pasta water
  • salt and pepper to taste
  • 1 TBSP Parmesan


  1. Spiralize zucchini noodles, set aside and soak in paper towel until dry.
  2. While the zucchini is drying, add the rest of the ingredients to your blender and blend until it turns into a smooth sauce. Start with ¾ cup of salted hot water and add more as needed to get the consistency you want.
  3. Add zucchini noodles to a sautee pan and add sauce.  Cook for 2 minutes and serve.
  4. Top with cheese and enjoy!

** This sauce is best served the day it is made, as it uses avocados which will turn a brownish color.
